In the books, Melisandre begins to notice a few changes while she’s at the Wall. First of all, her magic is way stronger while she’s there, and while she thinks it has to do with spells that were woven into the Wall during its construction, there’s probably more to it than that.
As we all know, Mel believes Stannis to be the reincarnation of Azor Ahai, a hero from the religion of R’hllor who once saved the world from darkness. Her religion teaches that he will live again when cold and darkness threaten the world, which seems to be happening with the return of the White Walkers.
However, while she’s at the Wall, Mel’s visions begin to change. She no longer sees Stannis in her flames when she asks to see her savior, instead, she sees Jon Snow. That’s right, Mel starts to come to the conclusion that she’s been following the wrong guy and it’s Jon Snow, not Stannis, who will lead the world against the White Walker threat. Whether this ends up coming to pass or not remains to be seen, but that’s why Mel takes a sudden interest in ol’ Jon.
