UPDATE 6/9: After Season 3, Episode 10: "Mhysa" we now have confirmation in-show: Theon's captor is, as we thought, Roose Bolton's bastard Ramsay Snow. 

Ramsay Snow is a name we've heard a lot this season. Roose Bolton's bastard was in charge of the force that re-took Winterfell from the Ironborn, but we have yet to officially meet him. However, we've been fairly certain since Season 3, Episode 4: "And Now His Watch Is Ended" that the infamous Bastard is one and the same as Theon's unnamed captor, played by Iwan Rheon. Episode 6: "The Climb" completely confirmed this suspicion for us.

Over the beginning of the season Iwan Rheon's character "rescued" Theon from the captors who were torturing him. He claimed he was sent by Yara, Theon's sister, to save Theon. First he let Theon out of the dungeon he was kept in, and then, when Theon's captors closed in on Theon, he killed them by bow and arrow. But in Season 3, Episode 4: "And Now His Watch Is Ended" he showed his true colors, bringing Theon back to the dungeon for more torture.

On Episode 6, this character proved himself to be a complete sadist, declaring that he isn't torturing Theon for information (he already spilled all), or vengeance (Theon thought he was a Stark bannerman taking revenge for what Theon did at Winterfell). No, he explained: "This isn't happening to you for a reason. Well, one reason. I enjoy it."

This line confirms what we've already felt very confident of: Iwan Rheon's character is Ramsay Snow. Ramsay in the books is a true sadist; a madman who delights in pain to a level even Joffrey cannot touch. The sick games he's played with Theon on the show, plus that line, are exactly how his character acts in the books. Plus, IMDB does list Iwan Rheon as "Ramsay Snow." In our minds, there's no question anymore.
