Only a few weeks into January, and we’re still keeping our diet resolutions. Yes, we’re shocked too! Fortunately, we found six resolution-keeping recipes that have us running to the kitchen, and counting the minutes ‘til mealtime!

Resolution: Try a Vegan Diet
Our friends might tease us for going vegan and giving up, well, lots, but we’re up for the challenge. Veggie guru Heidi at 101 Cookbooks is helping us out with a flavorful, animal-free feast of ginger soba noodles. As animal lovers, we’re happy to save as many hot dogs as we can.

Resolution: Eat Clean
Thai Grilled Shrimp Skewers with Watermelon and Avocado
2013 is the year of clean eating for us, so we’re all about this super fresh, super healthy — and totally tasty — seafood recipe from Clean Eating Magazine that only takes 20 minutes to prepare, and even less to enjoy!

Resolution: Cut Carbs
Crock Pot Whole Chicken
We almost no time to cook, and even less time to worry about eating too many carbs, but Food.com has that all under control. To keep our carb-free resolution, this fall-off-the-bone chicken recipe lets us flip the switch on the crock pot and come home at the end of the day to a delicious dinner.

Resolution: Go Low-Fat
Three Bean and Beef Chili
Just because we’re counting fat grams doesn’t mean we’re willing to starve. Thankfully, the Food Network understands our hunger pain, and has shared a yummy, yet low-fat, chili recipe for a beefed up winter staple.
 
Resolution: Get Raw
We’re trying (just trying) out the raw food diet. We’re not sure how long we’ll last before the junk food cravings kick in, but for now, we’re depending on The Best of Raw Food to indulge our French fries craving with raw ones. They’re not McDonald’s, but they’re delish!

Resolution: Try the Mediterranean Diet
Some of the most gorgeous leading ladies come from the Mediterranean. So if taking a chance on a butternut squash pilaf recipe from Eating Well ups our chances of looking like Penelope Cruz, then please, hand over the fork.
