Hummus can sometimes be ho-hum — who hasn’t been disappointed in some of those sad grocery store versions? — but really great homemade hummus can be the "it" food at any potluck. Renowned food writer Ruth Reichl shared some helpful tips with Gilt Taste that will take your hummus to the head of the table.

Not surprisingly, the secret behind creamy smooth perfection is all about choosing the right chickpeas (dried, not canned!) and how you treat them. Be prepared for a long process of soaking, cooking, skinning, cooling, and puréeing if you want to impress your friends with your dip. Ruth says good hummus should be so velvety, you'll want to rub the concoction all over your body, so it sounds like it's worth all the hard work.
