Just because you’ve secured a sitter for the evening (score!) doesn’t mean it’s time to round up hundreds of takeout menus or leave a box of mac and cheese on the kitchen counter. While you’re out on the town, there are plenty of easy and delicious dishes that the babysitter can put together in a pinch for the kiddos. (We’re big fans of mini DIY pizzas!) Inspired by the list over at Circle of Moms, here are some more of our fave babysitter-approved meals:
 
Quesadillas
Before the sitter arrives, you handle the prep work. Slice, dice, and shred whatever ingredients your kid loves — cheese, olives, chicken, tomatoes, etc. — and place them each into individual bowls. When it’s time for dinner, the sitter can gather all the prepped quesadilla trimmings and let the kids create their own atop a tortilla. Fold the tortilla in half, give it a quick warm up in a pan or in the microwave, and it’s ready to eat. Find a simple recipe at, fittingly, Simply Recipes.
 
Grilled Cheese Sandwiches
Pretty much an essential among pint-sized gourmands, the grilled cheese is as easy to make as it is to eat. Prep any ingredients beforehand for the sitter so he or she can let the kids go wild when concocting their own gooey iteration. Bits of bacon, swiss and cheddar cheese, and thick sourdough bread are must-have GC ingredients in our pantries. Or try this cheesy, tropical version out.

Veggies and Rice Stir Fry With Edamame
Pop a bowl of frozen edamame in the microwave for five minutes, then once it’s done, sprinkle a little salt on it and you’ve got a kid-perfect appetizer. (Just make sure your kiddos know to squeeze the bright-green soy beans out with their fingers and not to eat the pods!) While they’re noshing, the babysitter can throw together some five-minute brown rice with frozen veggies like broccoli, carrots, or cauliflower and a dash of teriyaki or soy sauce.
